  • Tamales: Boiled pockets of corn dough stuffed with meat and served in banana leaves.
  • Pozole: Chicken or pork broth with corn, herbs and spices, with onions, lettuce, dried ground chilli, lemon juice and radish sprinkled on top.
  • Mole: A spicy sauce that is poured over meat, with chocolate sometimes added.
  • Tacos al pastor: corn tortilla with pork, onions, coriander and pineapple.
  • Tostadas: fried tortillas served with frijoles (refried beans), cheese, meat or seafood.
  • Enchiladas: corn or flour tortillas filled with meat, cheese and beans, topped in a chilli sauce.

  • Chilaquiles: One of the most popular Mexican breakfast dishes and considered a typical food in Mexico. Consist on fried corn tortillas topped with red or green salsa, scrambled or fried eggs, cheese and cream.
  • Atole and Tamales: This breakfast consists of a tamal, which is basically a pattie made from masa (corn dough) and lard, wrapped around a sweet or savory filling, inside either a corn husk or a banana leaf. 

 

Accompanied by a warm, thick and hearty drink called atole, which is traditionally made with corn dough, water, sugar and cinnamon.

  • Café de Olla o Café con leche y pan dulce (coffee and sweet bread): The “Café de Olla” is a warm and delicious brew made with coffee beans, cinnamon and piloncillo (a type of raw sugar very similar to molasses). The “Cafe con leche” (Milk coffee) is warm milk and a spoonful of instant coffee. They’re both the best accompaniment for a delicious Mexican pastry: a brioche-like bun topped with a sugary vanilla crust or chocolate flavored crust.
  • Molletes: Made with a bread roll which is cut horizontally, toasted, and covered with a smear of refried beans, melted cheese, and topped with fresh pico de gallo (chopped tomato, onion and serrano chili).

Each state of the republic of Mexico has its own style of spicy. Fresh chiles and dried chiles are used in profusion within dishes of all Mexico, pickled chiles as accompaniments, and chile-bearing salsas are offered in multiple versions at a single meal. 

 

Some dishes such as chile rellenos and chiles en nogado feature chiles as the centerpiece of the recipe. Among the common southern Mexican dishes we find the chilate de pollo (a fiery chicken soup) and sopa de camarones, (a shrimp soup from Guerrero) can both be punishingly hot. 


From Jalisco, the bright red goat or mutton stew called birria is usually very spicy. Among salsas, the green and the chipotle versions that come alongside many dishes are usually the hottest, and in addition to these salsas, most Mexican restaurants also provide pickled or fresh jalapenos, and bottled hot sauces such as El Yucateco, Tapatio, and Valentina.
